Carrot Raisin Cheesecake

Carrot Raisin Cheesecake Ingredients

For the crust

Carrot Raisin Cheesecake
I like a little chocolate on almost any dessert!

• 1 cup graham cracker crumbs
• 3 tbsp. white sugar
• 1/2 tsp. cinnamon
• 3 tbsp. soft butter (room temperature)

For the filling

• 3 packages cream cheese, softened
• 1/2 cup white sugar
• 1/2 cup all-purpose flour, divided
• 4 large eggs
• 1/4 cup + 1 tbsp. unsweetened orange juice
• 1 cup finely shredded carrots
• 1/4 cup raisins
• 1/2 tsp. ground nutmeg
• 1/4 tsp. ground ginger
• 1 cup sifted icing sugar



Prepare the Crust

Combine crumbled graham crackers, sugar, cinnamon and butter, then press into the bottom of 9-inch springform pan.

Bake just the crust for 10 minutes in a 325 degree oven.

Prepare the Filling

Reserve 4 ounces of cream cheese for the last step of the recipe.

Combine 2 1/2 packages of the cream cheese, sugar and 1/4 cup of the flour, mixing on the medium setting with your mixer until well blended. Add the eggs and 1/4 cup orange juice and continue until the mixture is smooth and even.

Separately, combine the remaining flour, carrots, raisins, and spices and stir together well. Stir into to cream cheese mixture. Finally, add the mixture to the crust lined springform pan.


Bake, Chill, Serve, Enjoy

Bake at 450 F. for 10 minutes, then change the oven temperature to 250 degrees and bake for another 55 minutes.

Use a knife to separate the cake edges from the side of the pan. Cool then remove the spring rim from the pan. Chill for a few hours before serving.

Icing for the top

Combine remaining cream cheese and orange juice, mixing until well blended. Gradually add powdered sugar and mix until well blended. Spread over top of cheesecake.

Garnish with carrot curls, raisins, or sprinkle with graham cracker crumbs, if desired.
