Apple Coffee Cake Recipe

This recipe is traditionally enjoyed at breakfast, but I know that never stopped me from eating it at any time of the day before!

Most people think coffee is the main ingredient in a coffee cake but that's not the case at all.

The truth of the matter is that any cake that's great to eat with your coffee is a coffee cake. This one is perfect for you if you're an apple lover!

It has just the right balance of sweet (but not too sweet) flavor going on.

Top it off with a generous helping of cinnamon spice and you have a combination that is sure to thrill every taste bud it meets.

When you bite into this moist, chewy cake filled with apple chunks and yummy goodness you're going to wish every meal was breakfast!

The next time you have apples that no one is eating, think of this recipe - problem solved!

Apple Coffee Cake Recipe

Ingredients

  • 1 egg
  • 1/2 cup whole milk
  • 1 peeled and sliced medium apple
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup sugar
  • 1 teaspoon ground cinnamon
  • 5 1/2 tablespoon unsalted butter


Directions

Preheat your oven to 375 degrees.

In a small bowl combine 1/3 cup of sugar and cinnamon.

In a medium bowl, cream butter and 1/3 cup sugar until smooth and then add your eggs and mix until fully incorporated.

In a large bowl combine sifted flour, baking powder and salt. Add the contents of your medium bowl to this mixture and incorporate completely.

Take a 9 inch non-stick square baking pan lightly coated with baking spray or shortening and pour half your batter into the pan. Lay the apple slices on top of the batter so they cover it completely.

Next, sprinkle half of the cinnamon and sugar mixture over the apple slices, then pour the rest of the batter on top and sprinkle the remaining cinnamon and sugar on top of that.

Bake for approximately 25 minutes or until your cake is golden brown and passes the "toothpick test".


You can garnish with a few more apple slices or some cinnamon sticks but this coffee cake is great just the way it is.  Just pour some coffee!
