Preheat your oven to 350 degrees.
Put your raisins in a small bowl and cover them with warm water. Let them soak for 10 minutes while you prepare the cake batter.
In a large cream butter and sugar until smooth and creamy and then add your vanilla and eggs. Add your baking soda and 1 tablespoon of warm water and incorporate the mixture completely.
In a medium bowl, sift and combine your dry ingredients. Add this to the large bowl along with your chopped apples and drained raisins and mix thoroughly.
Pour the entire better into a 10 inch tube non-stick baking pan lightly coated with baking spray.

1/2 cup soft unsalted butter
4 oz. Soft cream cheese
2 cups icing sugar
1 tsp. Vanilla extract
In a large mixing bowl, beat the butter and cream cheese until well combined. Slowly add the icing sugar until it is smooth and creamy, and then add your vanilla.
When the cake is cool, spread the cream cheese frosting on the top and sides of your apple cake.
