An easy carrot cake recipe is one that is mixed all at once, without a bunch of complicated preparation steps.
Even easier is a recipe that uses ingredients you already have on hand.

The first carrot cake recipe that takes less time from start to finish than watching your favorite movie, including bake time.
It's the perfect recipe to serve at luncheons, birthday parties, and anniversary parties, or any casual occasion that calls for a simple cake.
Keep it casual with a sprinkle of coconut flakes or powdered sugar, or go for the traditional fully frosted cake with cream cheese frosting.
The simpler one is just carrots and spices, but the second one also has bananas and walnuts for even more nutritious goodness.
1 cup sugar
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon powder
1 1/2 cups freshly grated carrots
1/2 cup olive oil
Preheat your oven at 350 degrees.
Combine all the ingredients in a large bowl and mix thoroughly.
Then pour the mixture into an 8x12 non-stick baking pan or a loaf pan that is lightly coated with baking spray.
Bake for forty five minutes or until the center of the cake is firm and a toothpick comes out clean.
Take the cake out of the oven and cool to room temperature before serving.
Add something special onto the top of your carrot cake with this great cream cheese frosting. This is optional, to keep it healthy omit this icing and dust with powdered sugar.
Easy Cream Cheese Frosting from scratch
8 oz soft cream cheese
1/2 cup soft butter
2 cups icing sugar
1 tsp. vanilla extract
Beat the cream cheese and butter together until they become creamy, then add in the icing sugar and beat for one more minute. Next add your vanilla and beat for another minute.
Spread the entire mixture over the cake.
This Easy Recipe for Carrot Cake, as well as the one above, is healthier than most cakes because it has all those fruits and veggies, but don’t be fooled into thinking you can eat more of it.

If you don't have access to Muscovado sugar, you can substitute light brown sugar.
1 cup all-purpose flour
2 tsp baking powder
1/2 tsp. salt
2/3 cups light Muscovado sugar
2/3 cups walnuts
1/2 cup carrots, grated
2 bananas, mashed
2/3 cups sunflower oil (or your favorite oil)
3/4 cup cream cheese
¼ cup soft butter
1 cup icing sugar (powdered sugar)
teaspoon vanilla extract
Pre-heat the oven to 350F. Grease an 9 inch square cake pan.
Measure all of the cake ingredients into a bowl and mix well until thoroughly blended and smooth. Pour into the cake pan and level.
Bake for about 50-60 minutes until the carrot cake is well risen and shrinking away from the sides of the pan. Allow to cool. Turn out and leave to cool further.
For the topping measure all of the ingredients into a bowl and mix well until smooth.
Spread over the top of your carrot cake.
